Especially cupcakes. And more importantly, frosting. Frosting is my favorite part of the whole cupcake experience.
However, much to the dismay of a lot of my buttercream-loving foodie friends, I'm just not into it. It's way too sweet for moi. I like a little tang, a little zip. Which is why I've been a cream cheese frosting devotee forever and ever.
That all changed when artisan cheesemaker Tasia Malakasis (photo below) of the celebrated fromagerie, Belle Chevre, in Elkmont, Alabama, recently introduced me to the idea of chevre frosting.
Think of it as the more sophisticated, flavor-times-ten version of cream cheese frosting.
Wowza, it's good!

Chevre Icing
8 ounces Belle Chevre goat cheese, room temperature
1/4 cup butter, room temperature
3 cups powdered sugar
2 tsp vanilla, optional
Cream butter and goat cheese in a medium bowl with electric mixer, until smooth and fluffy. Add powdered sugar a cup at at a time, continuing to beat. Add vanilla if desired, and beat until you acheive the light fluffy texture of a buttercream frosting. Use to top cupcakes or cookies.
